Air Fryer Cajun Chicken and Vegetables

  • 1 lb chicken breast, cut into 2 inch pieces
  • 1/2 of a red bell pepper, cut into 2 inch pieces
  • 1/2 of a yellow bell pepper, cut into 2 inch pieces
  • 1 cup green beans, cut into 2 inch pieces
  • 1 cup broccoli florets
  • 1 cup sweet potato, cut into 1 inch cubes
  • 2-2 tbsp olive oil
  • 1-2 tbsp cajun seasoning
  • 1 tsp kosher salt

Instructions

  • Preheat the air fryer to 400ºF.
  • Place the chicken and vegetables in a large mixing bowl. Add the olive oil to the bowl and toss to coat. Then sprinkle the cajun seasoning and salt into the bowl and toss the chicken and veggies to combine.
  • Working in 2-3 batches, place the chicken and vegetables in the air fryer basket in a single layer if you can, they may overlap a bit and that's ok. Air fry for 6 minutes, toss and continue air frying for 5-6 more minutes or until the chicken has reached an internal temperature of 165℉.
