You’re going to be obsessed with this Air fryer parmesan potatoes recipe!
- Easy to make: With only a few steps of prep and just a handful of ingredients, this is a simple side dish for any busy weeknight dinner.
- Packed with flavor: A blend of cheese, herbs, and spices come together with rich butter for mouthwatering potatoes that are fluffy and crisp.
- Versatile: Because the flavors of this dish are classic, they pair perfectly with so many main courses!
This is one of those classic side dishes that seems so simple, but the flavor and texture blow you away. I never get tired of eating these garlic parm potatoes, and they can be customized to fit any menu or paired with your favorite sauces!
When the oven is already occupied (helloooo Thanksgiving…I’m looking at you!), these are great to crisp up in the air fryer. A simple combo of common spices and parsley team up with rich butter to create a perfect side dish to please any crowd.
Like my Air Fryer Garlic Knots and this Turmeric Tofu, this recipe is a great one to keep in your back pocket for those nights when you want maximum payoff for minimum effort!
Ingredients you will need
Mini potatoes: Also called baby potatoes, these miniature potatoes are the perfect size for air fryer cooking. You can also use Russet potatoes, red potatoes, or any kind of larger potatoes as long as you cut them into smaller pieces, but this recipe works best on mini potatoes.
Spices: For my potatoes, I just add some paprika, salt and black pepper. You can add more flavor with onion powder, cumin, lemon pepper, Italian seasoning, or red pepper flakes.
Butter: Start with unsalted butter so you can adjust the salt level to taste. Olive oil and avocado oil will make these potatoes a little more calorie friendly, but I like the rich flavor butter brings.
Parsley: Fresh parsley will give the most fresh and vibrant flavor, but you can use dried parsley as well if you need to.
Garlic: I also prefer mincing fresh garlic cloves, but using jarred garlic or even garlic paste or garlic powder can be a good shortcut.
How to make parmesan potatoes
- Chop the potatoes: Cut the baby potatoes in half.
- Score the potatoes: Use a sharp knife to score the potatoes (this will allow the butter and spices to seep in for more flavor distribution!)
- Add to air fryer: Pour the melted butter into the bottom of the air fryer basket and mix in the paprika, garlic, salt, and pepper. Add the potatoes cut side down in a single layer, use a brush to distribute the butter, then sprinkle with cheese and air fry at 390 F for 20 minutes.
- Flip the potatoes: Turn the potatoes over and add more Parmesan cheese and half the fresh chopped parsley. Air fry for an additional 10 minutes or until golden brown.
- Garnish and serve: Top with the other half of the parsley and serve hot and crispy!
My favorite sauces to serve with these parmesan crusted potatoes
Because the flavors of these potatoes are classic and familiar, they pair super well with a wide variety of sauces. A squirt of ketchup is never a bad idea, but you can also serve them with BBQ Sauce, homemade Chick-fil-A Sauce, Chili Garlic Sauce, Crab Cake Sauce, homemade Big Mac Sauce, or Bang Bang Sauce!
Storing and reheating
If you have leftover potatoes, allow them to cool to room temperature before storing them to prevent excess moisture. I recommend keeping them in an airtight container or a zip top plastic bag in the fridge or freezer. They’ll last 4 to 5 days in the fridge and a few months in the freezer.
Reheat your Parmesan potatoes in the air fryer at about 350 degrees until they’re heated through and crispy again. For best results, from frozen, allow the potatoes to thaw in the fridge before reheating.
You can reheat in the microwave if you’re in a rush, but the result will be a little soggy and mushy and the potatoes will lose their crispiness.
