This savory Air Fryer Stuffed Chicken Breast is the perfect way to turn ordinary ingredients into an elegant dinner!

Chicken breasts are one of my favorite proteins to work with because they’re so versatile. As true as that is, sometimes I find myself getting tired of the same old recipes.

That’s when I turn to this stuffed chicken breast! It’s prepped and on the table in just half an hour, but it’s sophisticated enough that you could serve it for a date night at home or a dinner party.

Ingredients you will need

Chicken breasts: Boneless skinless chicken breasts are the best option for this dish because they are thick and easy to stuff.

Seasonings: A combination of garlic powder, paprika, kosher salt and black pepper are all you’ll need to give your chicken breasts a nice coating of flavor.

Baby spinach: Another kind of green can be used, but I love how easy it is to work with baby spinach leaves.

Roasted red peppers: Buy a jar of these and quickly dice them into smaller pieces if needed to add delicious flavor to this chicken dinner. You can also make your own roasted red peppers.

Feta cheese: Plays well with the healthy spinach and the bite from the onion and garlic.

Red onion: Gives your stuffed chicken a nice complex savory flavor with lots of depth.

Garlic cloves: I prefer to use fresh garlic cloves when possible, but jarred garlic and garlic paste can be convenient ways to get that garlicky flavor into your chicken.

How to make stuffed chicken breast

  1. Prepare Chicken: Pat the chicken breasts dry and use a good sharp knife to create a slit in each. (Don’t cut all the way through).
  2. Season: Rub both sides of each chicken breasts with all of your seasonings. I like to combine them in a separate mixing bowl first for better coverage.
  3. Prepare Filling: In another medium bowl, combine the red onion, spinach, feta cheese, minced garlic, and roasted red peppers.
  4. Stuff Chicken Breasts: Divide the filling mixture between the two pockets you created in the chicken breasts. Secure with toothpicks if needed.
  5. Air Fry: Cook for 18 to 20 minutes in a preheated air fryer, or until the chicken is fully cooked and golden brown. Then transfer the chicken to a serving plate, garnish and serve!

How long to bake stuffed chicken breast

Don’t have an air fryer or want to reserve it to make a veggie side dish like these Brussels Sprouts with Bacon or Parmesan Potatoes? You can make this stuffed chicken breast in the oven as well!

Start by assembling the chicken breasts as normal with the seasoning and filling. Heat a bit of olive oil in a large cast iron skillet.

Sear the chicken on each side for 2 to 3 minutes, or until it develops some nice color. Transfer the entire skillet to the oven and bake at 375F for 15 to 20 minutes.

(If you don’t have an oven-safe skillet, you could also pop the seared chicken on a baking sheet instead after searing.)

Recipe Variations

  • Mediterranean Stuffed Chicken: To really lean into that Mediterranean flavor, add other ingredients like black olives or Kalamata olives, basil, oregano, or chopped artichoke hearts.
  • Southwest Stuffed Chicken: To infuse this chicken with Southwest flavors, incorporate ingredients like black beans, corn, diced green chiles, cilantro, and a sprinkle of cumin. Adding a touch of lime zest or juice can elevate the freshness, complementing the spicy and earthy tones typical of Southwest cuisine.
  • Cream Cheese Stuffed Chicken Breast: To enhance the creamy richness of this dish, incorporate finely chopped spinach, sun-dried tomatoes, and garlic into the cream cheese filling. Add some herbs like thyme or basil to infuse it with aromatic flavors.

Recipe Tips

  • Check the internal temperature: Use a digital thermometer to check that the internal temperature of the chicken reaches at least 165F to ensure it’s properly cooked. Check the thickest part of the chicken breast for best results.
  • Double it: This recipe is perfect as a dinner for two, but if you need to feed more people you can easily double or even triple the recipe! You may have to air fry in batches if you do this. or bake it in the oven instead.
  • Other garnish ideas: Top your cooked chicken with some diced cucumber, sun-dried tomatoes or fresh tomato, more herbs like parsley, dill, and rosemary, or a sprinkle of Parmesan cheese or mozzarella cheese.

Storing and reheating

Keep any leftovers in an airtight container in the fridge for 3 to 4 days. You can also freeze this stuffed chicken for up to a month. Make sure you let it thaw in the fridge before reheating.

To reheat, I recommend cooking in the oven at around 325F. You can use the microwave instead if you need it to get hot faster, but the textures and flavors will hold up better in the oven.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 3/4 tsp  fresh baby spinach leaves
  • 1/4 cup roasted red peppers, diced
  • 1/4 cup crumbled feta cheese
  • 3 tbsp finely diced red onion
  • 2 garlic cloves, minced
  • Olive oil spray or cooking spray

Instructions

  • Preheat the air fryer to 360°F. Then pat the chicken dry. Use a sharp paring knife to make a horizontal slit in the side of each chicken breast (in the thickest part). This will be your pocket for the stuffing.

  • Season both sides of the chicken with the garlic powder, paprika, salt, and pepper. In a mixing bowl, use your hands to combine the fresh spinach leaves, diced roasted red peppers, crumbled feta cheese, red onion, minced garlic, salt, and pepper.
    Divide the spinach and feta mixture into each of the pockets you created in the chicken breasts. Use toothpicks to secure the edges if necessary.
    1/2 tsp garlic powder, 1/2 tsp paprika, 1/4 tsp kosher salt, 1/4 tsp black pepper, 3/4 tsp  fresh baby spinach leaves, 1/4 cup roasted red peppers,, 1/4 cup crumbled feta cheese, 3 tbsp finely diced red onion, 2 garlic cloves,
  • Lightly spray the stuffed chicken breasts with olive oil spray on both sides. Place the stuffed chicken breasts in the air fryer basket, making sure they are not touching. Air fry the stuffed chicken for 18-20 minutes, or until the chicken is golden brown and the internal temperature has reached 165F.

  • Transfer the cooked chicken to serving plates and garnish with additional feta cheese and fresh herbs if desired.
