  • 1 ½ bananas ripe
  • 1 large egg, or 2 small eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 2 tbsps melted butter
  • 1 1/2 cups all-purpose flour
  • 2 tsps baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • ¼ cup chocolate chips
  • cooking oil spray or more melted butter to grease the pans
  • optional toppings: sliced bananas, chocolate chips, and maple syrup

Instructions

  • In a medium bowl, mash ripe the bananas using a fork. Add in the egg, vanilla, milk and melted butter and whisk until well combined. Add in the all-purpose flour, baking powder, sugar, salt and the chocolate chips at the end. Whisk until well combined.
  • Preheat the air fryer at 350º F.
  • Spray the pancake molds with cooking oil spray or grease with melted butter.
  • Pour around ¼ cup of batter into each mold and place the molds inside the air fryer basket. Air fry the pancakes for 8 minutes, or until they are golden brown on top. Repeat the process for the remaining batter.
  • For serving, move the pancakes onto a platter and top with with sliced banana, chocolate chips, and maple syrup.
