Heat a skillet with 1 tbsp of olive oil on medium heat. Add the onions and sauté until soft, about 3-4 minutes. Then set aside.

Whisk the eggs, milk, salt, pepper, and dijon mustard (if using) together in a mixing bowl.

Add the remaining 1 tbsp olive oil to the skillet, then pour in the egg mixture and cook over medium heat, stirring constantly, until the eggs are almost set, about 2 minutes. Add the cheese and continue to stir until just melted, about 2 minutes.

Divide the eggs evenly over 4 tortillas, leaving 1.5 inches around the edges free. Top each with fillings (bacon, sweet potato, red pepper, onions, and avocado). Fold the bottom and top of the tortilla in, then roll into a burrito. Repeat with the remaining burritos.
1 large roasted sweet potato, 8 strips bacon, 1 red pepper, 1 large avocado, 4 10 inch flour tortillas
Preheat the Air Fryer to 390F. Spray the Air Fryer basket with olive oil. Place all 4 burritos seam side down in the air fryer, spritz the burritos with oil, and air fry at 390F for 4 minutes. Flip and cook another 2 minutes or until golden and crispy.
