Air Fryer Breakfast Burritos

SO easy to make, these air fryer burritos are perfect for breakfast on the go or breakfast-for-dinner and are packed with your favorite breakfast staples!

Equipment

Ingredients

  • 2 tbsp olive oil
  • 1 small red onion diced
  • 8 eggs
  • 2 tbsp milk
  • 1/2 tsp dijon mustard optional
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cheese Mexican 3 blend
  • 1 large roasted sweet potato cut into 1 inch cubes
  • 8 strips bacon cooked and diced
  • 1 red pepper diced small and roasted
  • 1 large avocado cubed
  • 4 10 inch flour tortillas

Instructions

  • Heat a skillet with 1 tbsp of olive oil on medium heat. Add the onions and sauté until soft, about 3-4 minutes. Then set aside.

  • Whisk the eggs, milk, salt, pepper, and dijon mustard (if using) together in a mixing bowl.

  • Add the remaining 1 tbsp olive oil to the skillet, then pour in the egg mixture and cook over medium heat, stirring constantly, until the eggs are almost set, about 2 minutes. Add the cheese and continue to stir until just melted, about 2 minutes.

  • Divide the eggs evenly over 4 tortillas, leaving 1.5 inches around the edges free. Top each with fillings (bacon, sweet potato, red pepper, onions, and avocado). Fold the bottom and top of the tortilla in, then roll into a burrito. Repeat with the remaining burritos.

  • Preheat the Air Fryer to 390F. Spray the Air Fryer basket with olive oil. Place all 4 burritos seam side down in the air fryer, spritz the burritos with oil, and air fry at 390F for 4 minutes. Flip and cook another 2 minutes or until golden and crispy.

Notes

  • Microwave the tortillas wrapped in a damp paper towel before rolling up the burritos to prevent them from breaking.
  • If freezing burritos, freeze them before air frying. Wrap in foil and store in the freezer once filled and rolled.
