Clean and pat the sea bass fillets dry with paper towels. Then, make 3 slits in the skin using a sharp knife.
Add the olive oil, dijon, lemon, paprika, parsley, salt, pepper and optional garlic to a small bowl and mix to combine. Reserve half the marinade in another small bowl for later and brush the remaining half over the fillets on all sides.
Place the fillets skin side up in the air fryer basket in a single layer leaving space about an inch or two between each one. Air fry for 8 minutes or until crispy on the edges and drizzle the remaining marinade over the sea bass and serve.
