Air Fryer Breakfast Burritos are the perfect morning meal on the go! Delicious, filling, and super easy to make, it’s a satisfying handheld breakfast that’s ready in no time thanks to the air fryer.

Who has time in the morning? As someone who mostly works from home, even I’m trying to find more minutes before lunch! No matter what your morning entails, it can get stressful really fast. And the first thing to usually go? Breakfast.

Well, no longer does that need to be the case! These breakfast burritos are the perfect solution. Just make a batch of them ahead of time. Then pop one in the air fryer so it’s hot and ready by the time you’re walking out the door. Super easy!

Best of all, breakfast burritos are super customizable so you can fill these with all your favorite breakfast staples or change it up every week so you never grow tired of them.

How to Make Air Fryer Breakfast Burritos

Step 1. Cook the eggs. Cook the eggs for about 2 minutes, then mix in the cheese and cook another 2 minutes.

Step 2. Assemble fillings. Add all of the fillings to each tortilla, leaving room around the edges.

Step 3. Wrap burritos. Carefully fold the top and bottom of the tortilla in and roll it into a burrito.

Step 4. Air fry. Place seam side down in the air fryer, lightly spray with oil, and cook for 4 minutes. Flip and cook another minute or two.

Recipe FAQs

Can air fryer burritos be frozen?

Absolutely! If you want to make several burritos ahead of time for quick meals throughout the week, wrap the uncooked burritos in foil, and pop them in the freezer.

How to store breakfast burritos?

If you have leftovers, allow them to cool. Then place them in an airtight container, wrap them in plastic wrap, or keep in a sealable plastic bag. They should last 2 to 3 days in the fridge if they’ve already been air-fried.

How to reheat breakfast burritos?

Just pop them back in the air fryer for a couple of minutes! If you’re reheating from frozen, they’ll probably need a bit of extra time.

Why are my tortillas breaking when I fold them?

When you roll up your burritos, the tortillas might be a little stiff or dry. Fix this by wrapping them in a slightly damp paper towel and microwaving for 10 to 15 seconds, or until they’re soft and pliable.

Ingredients

  • 2 tbsp olive oil
  • 1 small red onion diced
  • 8 eggs
  • 2 tbsp milk
  • 1/2 tsp dijon mustard optional
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cheese Mexican 3 blend
  • 1 large roasted sweet potato cut into 1 inch cubes
  • 8 strips bacon cooked and diced
  • 1 red pepper diced small and roasted
  • 1 large avocado cubed
  • 4 10 inch flour tortillas

Instructions

  • Add 1 tbsp of olive oil to a skillet. Add the onions and sauté until soft, 3-4 minutes. Set aside.

  • Whisk the eggs, milk, salt, pepper, and dijon mustard (if using) together in a bowl.

  • Add the remaining 1 tbsp olive oil to the skillet. Add the egg mixture and cook over medium heat, stirring constantly, until the eggs are almost set, about 2 minutes. Add the cheese and continue to stir until just melted, about 2 minutes.

  • Divide the eggs evenly over 4 tortillas, leaving 1.5 inches around the edges free. Top each with fillings (bacon, sweet potato, red pepper, onions, and avocado). Fold the bottom and top of the tortilla in, then roll into a burrito. Repeat with the remaining burritos.

  • Preheat the Air Fryer to 390F. Spray the Air Fryer basket with olive oil. Place all 4 burritos seam side down in the air fryer, spritz the burritos with oil, and air fry at 390F for 4 minutes. Flip and cook another 2 minutes or until golden and crispy.
