Ingredients you will need

Chicken breasts: You could also use chicken thighs if you prefer dark meat, but I like to use chicken breasts for this recipe.

Vegetables: Start with a combination of red bell peppers, yellow bell peppers, green beans, broccoli, and sweet potato cubes, then add or substitute veggies as you see fit.

Cajun seasoning: This spice mix is packed with warm, savory flavors with a slight kick of heat. If you can’t find store bought Cajun seasoning, it’s fairly easy to mix up your own!

How to make Cajun seasoning

To make your own Cajun seasoning, combine paprika (smoked paprika is particularly good here), salt and black pepper, garlic powder, onion powder, dried oregano, dried thyme, and cayenne pepper in a small bowl.

The quantities of each can easily be adjusted to your preference, so feel free to add more or less of each ingredient based on what you like. If you like things extra spicy, use more cayenne and/or add some red pepper flakes or chili powder as well.

What vegetables should I use?

For this Cajun chicken recipe I love starting with colorful bell peppers and adding broccoli, sweet potato, and green beans. You can also add some onions, mushrooms, green bell peppers, zucchini, or asparagus.

Root vegetables like carrots, potatoes, or turnips are perfect for a heartier option. Honestly, any vegetable chopped to the right size will taste great covered in Cajun seasoning and air fried for a nutritious meal!

  1. Season the chicken and veggies. Add the chicken and vegetables to a large bowl and drizzle with olive oil. Add the Cajun seasoning and toss until everything is well coated.
  2. Air fry the chicken and veggies. Working in 2-3 batches, place the chicken and veggies in the air fryer basket. Try to make a single layer if possible so the hot air can properly circulate, but a little bit of overlap is fine. Air fry for 10 minutes at 400 degrees F and give it a shake or toss everything halfway through.
  3. Serve. Cajun chicken and vegetables can be eaten as-is, served over rice or cauliflower rice, or on a bed of leafy greens for a tasty salad!

Knowing how to store chicken properly is important for optimal flavor and texture when reheating. llow leftovers to cool, then transfer to an airtight container or plastic bag. Keep in the fridge for 3 to 4 days, or freeze for up to 3 months.

How to reheat chicken in the air fryer

Preheat the air fryer to 375 degrees F, then add your leftovers and cook for about 4 minutes. Give everything a good mix and give it another 3 to 4 minutes, until it’s properly heated through.

From frozen, make sure the chicken and veggies fully thaw before you air fry them for the best result. The leftovers do freeze and reheat pretty well, so if you’re not planning on eating them the next day, this recipe is good for longer term meal prep as well.

Should you put raw chicken in an air fryer?

Yes, you can cook raw chicken in your air fryer! As long as you cook the chicken all the way through (to an internal temperature of at least 165 degrees F) it’s perfectly safe to add raw chicken right to the air fryer basket.

  • 1 lb chicken breast, cut into 2 inch pieces
  • 1/2 of a red bell pepper, cut into 2 inch pieces
  • 1/2 of a yellow bell pepper, cut into 2 inch pieces
  • 1 cup green beans, cut into 2 inch pieces
  • 1 cup broccoli florets
  • 1 cup sweet potato, cut into 1 inch cubes
  • 2-2 tbsp olive oil
  • 1-2 tbsp cajun seasoning
  • 1 tsp kosher salt

Instructions

  • Preheat the air fryer to 400ºF.
  • Place the chicken and vegetables in a large mixing bowl. Add the olive oil to the bowl and toss to coat. Then sprinkle the cajun seasoning and salt into the bowl and toss the chicken and veggies to combine.
  • Working in 2-3 batches, place the chicken and vegetables in the air fryer basket in a single layer if you can, they may overlap a bit and that's ok. Air fry for 6 minutes, toss and continue air frying for 5-6 more minutes or until the chicken has reached an internal temperature of 165℉.
