Bacon: Every cheeseburger is better with bacon, so I add chopped pieces of crispy bacon to these egg rolls!

Ground beef: I prefer lean ground beef, but you can also use ground chicken or ground turkey for a slightly lighter result, but ground beef will be the most burger-like. Ground bison is a great alternative as well if you’re looking for something more lean.

Garlic, dill pickles, and onion: Provide delicious flavor.

Seasonings: I start with a simple combination of salt and pepper, but feel free to add others if you want even more flavor.

Egg roll wrappers: You should be able to find these at your local supermarket. Wonton wrappers or even spring rolls could also work. You can usually find them refrigerated around the produce section.

Shredded cheese: Shredded cheddar cheese is my go-to, but you can use another variety of cheese if you like, like American cheese or pepper jack.

Burger sauce: Make a homemade burger sauce (like this Big Mac Sauce) by mixing mayo, ketchup, mustard, onion powder, and garlic powder.

Can I use spring roll wrappers?

If you can’t find egg roll wrappers, spring roll wrappers or phyllo dough sheets make ok substitutions, but a crispy crunchy egg roll wrapper will taste the best from a flavor and texture standpoint.

How to make cheeseburger egg rolls

There’s nothing better than a crispy egg roll…except a crispy egg roll with a cheeseburger filling! It’s the perfect appetizer that will have everyone saying “WOW”.

  1. Brown the beef. Cook up the ground beef and onion in a large skillet over medium-high heat until the beef is browned, then add the garlic and cook another minute. Drain excess grease.
  2. Prepare the filling. Add the salt and black pepper, cheese, diced pickles, and crumbled bacon to the meat mixture. Heat until the cheese is just slightly melted.
  3. Prepare egg roll wrappers. Line a baking sheet with parchment paper and fill a small bowl with water. Place one wrapper on a clean dry surface and use a damp towel to cover the rest.
  4. Make the egg rolls. Fill each egg roll wrapper and roll up the egg rolls, sealing them with a little bit of water on your finger.
  5. Air fry. Preheat the air fryer to 380 degrees F and arrange the egg rolls in a single layer in the air fryer basket. Brush with a light layer of olive oil and air fry for 8 to 10 minutes, flipping halfway through. You don’t need an egg wash, but if you would like them to have an even more golden-brown color you can use it instead of olive oil.
  6. Cool. Remove the egg rolls from the air fryer and allow them to cool for a few minutes. Serve with homemade burger sauce, ketchup, mustard, or your choice of dipping sauce.

Tip: a dash of Worcestershire sauce in the ground beef is delicious! it adds more depth to the flavor and richness to the meat.

How to roll an egg roll

1. With a corner facing you, add about 3 tablespoons of the beef mixture to the middle of the wrapper.

2. Fold down the corner opposite you over the egg roll filling and roll towards you, tucking in the sides as you go.

3. Moisten the bottom corner of the wrapper with a little water and seal the egg roll well, then place it seam side down on a parchment lined baking tray. Repeat with the remaining egg rolls.

How do you keep homemade egg rolls crispy?

When cooking air fryer egg rolls, be sure to allow a bit of space in between them for proper air circulation.

Cool the egg rolls on a wire rack in a flat layer to prevent excess heat from steaming them and making them soggy.

Also, make sure you fully preheat the air fryer before adding the egg rolls. You want them to start cooking as soon as you put them in.

Are egg rolls vegan?

It depends what they’re filled with! Most egg roll wrappers themselves are vegan, so you can make this recipe vegan by substituting a vegan meat substitute and vegan cheese, and omitting the bacon.

Can you freeze egg rolls?

Egg rolls are great to freeze! You can even freeze them before you cook them and store them for months at a time for quick meals or snacks down the line.

What to serve with cheeseburger egg rolls

Aside from the homemade burger sauce, I recommend pairing your cheeseburger egg rolls with french fries, air fryer polenta fries or a batch of air fryer banana peppers.

To create a tasty appetizer platter, serve crispy egg rolls alongside some chicken empanadas or air fryer cheese bites.

How to store

Allow the cooked egg rolls to cool, then wrap them individually or transfer to an airtight container in the fridge for 3 to 4 days.

You can also store leftovers in the freezer, both cooked and uncooked. Place them on a parchment-lined baking sheet and freeze for a few hours until solid, then transfer to another container or freezer safe bag.

How to reheat egg rolls in the air fryer

Preheat the air fryer to 350 degrees F and add the egg rolls to the basket. Give them a light spritz with cooking spray if you want them extra crispy.

Air fry for a few minutes, flipping once and cooking until they’re heated through. You can air fry egg rolls from frozen, but they’ll need a few extra minutes.

Ingredients

Egg Rolls

  • 3 slices bacon, cooked and finely diced
  • 1 tsp olive oil
  • 1 pound ground beef
  • 1 small yellow white onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbsp yellow mustard, or dijon
  • 1.5 cups cheddar, shredded
  • 1/2 cup dill pickles, diced
  • 1 16oz egg roll wrappers
  • 1-2 tbsp olive oil

Burger Sauce

  • 1/2 cup mayonnaise
  • 3 tbsp ketchup
  • 1 tsp yellow mustard, or dijon
  • 1/3 tsp onion powder
  • 1/4 tsp garlic powder

Instructions

Egg Rolls

  • Heat the olive oil in a large heavy bottomed skillet over medium-high heat. Then add the beef and onion and cook for about 10 minutes until it's cooked through. Add the garlic and cook for 1 more minute. Drain any fat from the mixture.
  • Add the salt, pepper, cheese, pickles and crumbled bacon to the beef mixture. Heat until the cheese is slightly melted. If you want the cheese to be more stringy in the mix. Only slightly melt 1 cup and add the remaining 1/2 cup spread across all the cheeseburger rolls as you roll them.
    Line a baking sheet with parchment and make sure you have a bowl of water next to you. Remove one egg roll wrapper from the pile, and cover the remaining wrappers with a damp paper towel to stop the edges from curling and drying out.
  • Place the wrapper on a work surface with a corner facing you. Place 3 tbsp – 1/4 cup of cheeseburger filling on the wrapper, and fold the top corner down over the filling.
    Tightly roll the wrapper into a cylinder, tucking in the corners as you roll, like you would a burrito, until the wrapper completely seals the filling.
    Moisten the last corner with water, and finish rolling up so the moistened corner seals the egg roll. The filling should be fully enclosed.
    Repeat for all egg rolls, placing the filled egg rolls on the parchment-lined baking sheet, covered with a damp paper towel, while you finish making them all.
  • Preheat air fryer to 380F and brush the outside of the egg rolls with olive oil. Place the egg rolls in the air fryer basket in a single layer with about an inch of space in between and air fry for 8-10 minutes, until brown and crispy, flipping halfway through.
    Remove the egg rolls from the air fryer, allow to cool slightly, and serve with burger sauce.
  • While the egg rolls are cooking, prepare the burger sauce. Combine the mayonnaise, ketchup, yellow mustard, onion powder, and garlic powder in a small mixing bowl.
